Why do you want to become an ACF Certified Master Chef®?

I desire to take my knowledge from my journey and be impactful as a motivation for future generations.

What are the reasons you chose to pursue ACF certification in your career?

The ACF was the only organization that showed me that there was a community and network opportunity with individuals who were passionate about our same career.

When is it the right time in a chef’s career to take the ACF Certified Master Chef exam?

I am not sure if there is a right time as much as there is a need to discipline yourself and hold yourself accountable for pursuing excellence without wavering.

Where do you see yourself professionally in 10 years?

I see myself still cooking strong everyday and sharing with all who desire to be a student, as I have been my whole career.

How do you prepare both mentally and physically for the exam?

I have prepared myself by creating a routine that no one is allowed to change, and staying committed to a new lifestyle of pushing myself, even in uncomfortable moments.


Shawn Loving, CEC®, CCA®, is Culinary Arts department chair and full time faculty at Schoolcraft College in Livonia, Michigan.  He has worked as executive chef for the U.S. men and women’s Olympic basketball teams in Beijing, China, and Rio de Janeiro, Brazil.  In addition, he was an executive chef for the 2010 FIBA World Championships in Istanbul and the 2014 World Championships in Madrid, Spain.  As a seasoned competitor, he is the recipient of numerous awards and medals from the American Culinary Federation, and was a member of the Michigan Culinary Olympic Team in 2012.

    I worked under you at Race Rock in Las Vegas, had lots of fun, elevated to executive sous chef / production manager in Houston, and Culinary director / Execute Chef in Cypress wood. Retired now after 31 years , writing and performing stand up . Love you brother, and thanks
